This bread is a great way to use up your summer zucchini.
Zucchini Bread
Equipment
- Bread Pan
Ingredients
- 1 ½ Cups Flour
- ½ Teaspoon Baking Soda
- ½ Teaspoon Salt
- 1 ½ Teaspoon Cinnamon
- 2 Eggs
- ½ Cup Vegetable Oil
- 1 Cup Sugar
- 1 ½ Teaspoon Vanilla Extract
- 1 Cup Grated, Unpeeled Zucchini
Instructions
- Preheat oven to 350 degrees.
- Stir flour, baking soda, salt, and cinnamon together.
- In a separate bowl, beat eggs until lemon colored. Add oil slowly to the eggs. Add sugar, vanilla, and grated zucchini to the egg mixture. Mix well.
- Stir the dry ingredients into the egg mixture.
- Pour into a lightly greased loaf pan.
- Bake for 60 minutes, or until done.
