Zucchini Bread

This bread is a great way to use up your summer zucchini.

Zucchini Bread

Equipment

  • Bread Pan

Ingredients

  • 1 ½ Cups Flour
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • 1 ½ Teaspoon Cinnamon
  • 2 Eggs
  • ½ Cup Vegetable Oil
  • 1 Cup Sugar
  • 1 ½ Teaspoon Vanilla Extract
  • 1 Cup Grated, Unpeeled Zucchini

Instructions

  • Preheat oven to 350 degrees.
  • Stir flour, baking soda, salt, and cinnamon together.
  • In a separate bowl, beat eggs until lemon colored. Add oil slowly to the eggs. Add sugar, vanilla, and grated zucchini to the egg mixture. Mix well.
  • Stir the dry ingredients into the egg mixture.
  • Pour into a lightly greased loaf pan.
  • Bake for 60 minutes, or until done.
